As a diabetic, I not only think about if what am I serving my children is healthy, I have to consider meal options that don’t raise my blood sugar. When I was first diagnosed, I assumed certain foods were off the table forever for me. Every diabetic is different, but for me, potatoes spike my numbers way too high. I soon happily discovered the deliciousness of something I spent most of my childhood dreading… cauliflower !
I always rolled my eyes at recipes that claim they taste like mashed potatoes, but they can and do! My boys even love when I make grilled cheese sandwiches with cauliflower bread instead of standard sliced bread! I’ve seen recipes for homemade tater tots with this amazing veggie but honestly, what hectic mom has time to make these from scratch?? So I was excited when I saw mention of tots made from cauliflower available in the frozen section at the grocery !!! I gathered up Boo and drove right down to get a few….
The store had 3 varieties and 2 brands. Two were from Green Giant and the third was from Kidfresh ( a company I had never heard of before). Boo was excited to have a taste test with Mama of these yummy looking treats!
The first tots we tried were by Green Giant. They were labeled: Cauliflower. I was happy to see they had no artificial flavors or preservatives ( this is important to me when feeding my kiddos). I was allotted 6 tots which was 15 carbs. ( I get 30 per meal) I thought this would not be much, but after 5 I was already feeling full…. Boo also got full fast and we truly enjoyed these. They crisped up nicely in the oven and tasted very good. My only negative point is that some of the tots you could taste chunks of cauliflower that had not been riced…. Somehow that bothers me. Maybe I just want to pretend it’s really a potato…. They were however decent and we would eat these again.
The second tots we tried were also by Green Giant. They were labeled Broccoli and Cauliflower Tots. I know, I know…. but I hoped they would be delicious…. I love to snack on fresh broccoli so was excited to try this…. I was so wrong… They had a mottled green appearance when we removed them from the bag and a strong odor of broccoli which did not make Boo anticipate eating them. Baking them did not magically make them appear like “normal” tots as I’m sure my son was hoping. When they were done I sat a plate of them between us…. Our own version of the Hunger Games— who would be called as a Tribute first..? Finally we both picked one up and stared at it. Would it magically become something else? No. Boo licked his then plopped it back on the plate with a look of disgust. I was a brave Jedi and popped the whole thing in my mouth…. This had to be the grossest thing I have ever eaten in my life. I washed it down with about a gallon of water.
You know what they say, third times the charm! A few days later we tried the third set of tots. Although the first ones we tried by Green Giant were , ok…, this last batch was like manna from Heaven! These were called Totally Rockin’ Tots by Kidfresh. These. Were. Rockin’!!! Boo loved them! I loved them! My blood sugar loved them! A serving size was 6 tots and only 8 carbs which meant I could have 12 if I wanted to! They were so amazingly good, but cauliflower fills you up fast so after 5 I was feeling full. Not only did they taste great, these were made from non-GMO products and had no artificial colors or flavors. Parenting and diabetic win!!!! The first two we tried were simply made from cauliflower while this last one also had a wee bit of potato but I tested my sugars before and after eating them and I was just fine! As if they could not be more perfect, they are come in BPA free packaging… I loved these, Boo loved these and there are now 2 more packages of these sitting in our freezer .
