As a diabetic, I not only think about if what am I serving my children is healthy, I have to consider meal options that don’t raise my blood sugar. When I was first diagnosed, I assumed certain foods were off the table forever for me. Every diabetic is different, but for me, potatoes spike my numbers way too  high. I soon happily discovered the deliciousness of something I spent most of my childhood dreading… cauliflower !

I always rolled my eyes at recipes that claim they  taste like mashed potatoes, but they can and do! My boys even love when I make grilled cheese sandwiches with cauliflower bread instead of standard sliced bread! I’ve seen recipes for homemade tater tots with this amazing veggie but honestly, what hectic mom has time to make these from scratch?? So I was excited when I saw mention of tots made from cauliflower available in the frozen section at the grocery !!! I gathered up Boo and drove right down to get a few….

The store had 3 varieties and 2 brands. Two were from Green Giant and the third was from Kidfresh ( a company I had never heard of before).  Boo was excited to have a taste test with Mama of these yummy looking treats!

The first tots we tried were by Green Giant. They were labeled: Cauliflower.  I was happy to see they had no artificial flavors or preservatives ( this is important to me when feeding my kiddos).  I  was allotted  6 tots which was 15 carbs. ( I get 30 per meal) I thought this would not be much, but after 5 I was already feeling full…. Boo also got full fast and we truly enjoyed these. They crisped up nicely in the oven and tasted very good. My only negative point is that some of the tots you could taste chunks of cauliflower that had not been riced…. Somehow that bothers me. Maybe I just want to pretend it’s really a potato….  They were however decent and we would eat these again.

The second tots we tried were also by Green Giant. They were labeled Broccoli and Cauliflower Tots. I know, I know…. but I hoped they would  be delicious….  I love to snack on fresh broccoli so was excited to try this…. I was so wrong… They had a mottled green appearance when we removed them from the bag and a strong odor of broccoli which did not make Boo anticipate eating them. Baking them did not magically make them appear like “normal” tots as I’m sure my son was hoping. When they were done I sat a plate of them between us…. Our own version of the Hunger Games— who would be called as a Tribute first..?  Finally we both picked one up and stared at it. Would it magically become something else? No. Boo licked his then plopped it back on the plate with a look of disgust. I was a brave Jedi and popped the whole thing in my mouth…. This had to be the grossest thing I have ever eaten in my life.  I washed it down with about a gallon of water.

You know what they say, third times the charm! A few days later we tried the third set of tots. Although the first ones we tried by Green Giant were , ok…, this last batch was like manna from  Heaven! These were called Totally Rockin’ Tots by Kidfresh.  These. Were. Rockin’!!! Boo loved them! I loved them! My blood sugar loved them! A serving size was 6 tots and only 8 carbs which meant I could have 12 if I wanted to! They were so amazingly good, but cauliflower fills you up fast so after 5 I was feeling full. Not only did they taste great, these were made from non-GMO products and had no artificial colors or flavors. Parenting and diabetic win!!!! The first two we tried were simply made from cauliflower while this last one also had  a wee bit of potato but I tested my sugars before and after eating them and I was just fine!  As if they could not be more perfect, they are come in BPA free packaging… I loved these, Boo loved these and there are now 2 more packages of these sitting in our freezer .

    I’m glad I wasn’t home for those broccoli tots… just seeing those, I would have nope’d right out of the house! The Kid Fresh ones look great though! I wanna give them a taste myself when I get home… it’d be nice to have tater tots that actually fill you up.

  5. Cauliflower is a cruciferous vegetable – I’ve learned a lot about the health benefits of these particular types of vegetables. That said, I don’t love cauliflower, so it’s encouraging to see there are some fun and unique ways that we could incorporate more of these into our diet.

    1. Hi Karla! I’m glad I’ve encouraged you to consider cauliflower! I was always hesitant, but found that if it is cooked correctly it takes on the taste of whatever seasoning, etc its cooked with and honestly can taste just like mashed potatoes (but only if cooked right and the cauliflower is properly riced first…)

  7. I use cauliflower all the time. I get the fresh crumbles that steam in the bag. I tried using the fresh heads of cauliflower, but realistically, cleaning, cutting, chopping, steaming, ugh. I am not a huge tater tot fan, but my son would be. He has never had them. I will see if they have these at our local store. Yum. Tastes for the taste test.

    1. Hi Addison 🙂 I found a great short cut for prepping the cauliflower fresh ( I grow it in my garden) … I quickly chop it up and stick it in food processor then when riced I put it in a bowl in microwave for less than a min then drain any water and squeeze it in cheesecloth….

  16. My hub and I are big tots fans as he is a meat potatoes kind of guy — I have swapped out cauliflower for potatoes and it takes a little getting used to but it is just so much healthier! I have to try the Kidfresh tots on my next shopping visit.

  22. That last batch does sound like the bomb!! It would be perfect for my two UBER picky boys. My big bubs will not eat anything with “green” in it. So getting him to eat anything healthy is so hard. I am not the best cook and not very imaginative. So if I can find products like these totally rockin tots then I am all for it!

  27. Holy Cow, I had no IDEA they made cauliflower faux Tater Tots! My husband (who does at least half the cooking) does WAY too many potatoes/pasta IMHO (I’m not diabetic but I do have my limit with carbs!), so we’ll have to look for these sometime, even though I hate cauliflower in its natural form!

    1. Hi Flossie! You can buy already riced cauliflower at the grocery or Costco and easily make mashed potatoes that taste exactly like the real thing. I also make my kiddos “bread” with it and make grilled cheese and they can’t get enough of it…. ( I found the recipes on Pinterest)

  28. Eating healthy has never been an issue for my kiddos. They prefer healthy alternatives rather than things like fries, pizza, etc. I bought these simply to try them and we love them. I love the article though and will be referencing it to some of my friends with toddler’s.

  30. I always thought it was a little far-fetched that cauliflower could taste like potatoes, but they totally do! Especially with spices, spices make all the difference! Isn’t it interesting how we prefer certain brands, even though they are the same item?

  43. These are great alternatives! I loved the broccoli and cheddar tots from GreenGiants. My dad is also a diabetic so I had to learn “better” alternatives when I learned to cook. It’s a struggle sometimes but there is always that chance you find something you like even more!!

  61. I have been trying to eat low carb/keto for the last 2 years. The first year was easy…N it so much since….mostly bc I had gone back to work and also have one super picky kid, so there is always junk around. Anyways when I am in track I love swaping cauliflower for potatoes and zuchinni for pasta. Yum! My 2.5 Year Old will eat the tots but I doubt my extra picky 4 year old step son will.
